Available in many sizes, the Polin Proof Box offers the
Perfect controlled environment for your breads & pastries!
All proof boxes are quipped with:
Automatically, this versatile unit will gently “re-awaken” your dough and
cycle into final proofing. You can hold the total capacity of the box for up to
4 hours in the proofing cycle, then use the box all day for proofing.
When you are ready to bake, your dough will be ready. At the designated time,
your retarder/proofer goes into the retarder cycle for the next day’s bake. The
Polin Retarder/Proofer can store 40 programs, and you can control time, temperature
& humidity. It will hold your retarded dough for up to 72 hours and is available
with a 2 - 15 rack capacity.

hold your dough overnight in a climate controlled environment
where your dough is “put to sleep.”
